The Great British Bake-Off Challenge 7

It has been a while since i attempted a Great British Bake-Off challenge so i thought it was about time i did another one.For this  challenge i decided to have a go at something simple,Jumbles.They are a biscuit that is made in one saucepan and you can mix and match your flavourings,just use what ever you have in your store cupboard.I had some dark chocolate to use up and added raisins as well.


Ingredients

125g unsalted butter.
100g caster sugar.
50g light muscovado sugar.
1 free range egg.
1/2 tsp vanilla extract.
175g plain flour.
1/2 tsp baking powder.
100g flavourings,eg chocolate,nuts,dried fruit etc.

Recipe

1.Pre-heat the oven to 190 degrees c/375 degrees f/gas mark 5.
2.Grease 2 baking trays with butter.
3.Gently melt the butter in a pan large enough to hold all the ingredients.
4.Remove from the heat and stir in the caster sugar and muscovado sugar.
5.Beat the egg with the vanilla extract in a separate bowl until thoroughly combined.
6.Stir the combined egg and vanilla mixture into the butter and sugar mixture.
7.Sift the flour and baking powder into the pan and stir in until thoroughly combined.
8.Add your chosen flavourings.
9.Using a tablespoon,scoop the mixture onto the baking trays.Be sure to leave plenty of room to allow for spreading.
10.Bake in the oven for 10 -12 minutes until they are a light golden brown.
11.Remove the trays from the oven and leave to cool for 3 minutes before transferring to a wire cooling rack to cool off completely.


I did not have all the ingredients necessary so i used substitutes.
I used ordinary butter for unsalted butter.
I did not have enough caster sugar so i made up the amount with granulated sugar(Thanks to the power of the internet i was able to confirm that that would be okay).
I had no light muscovado sugar but i did have dark brown muscovado sugar.All this did was make it darker than it should be.
Despite these substitutions the biscuits turned out fine although i would maybe use chocolate next time as it over powered the taste.
