I am still enjoying the Blackberry harvest so i decided to have a go at making a clafoutis with blackberries.The recipe came from Miranda Gardiner's cookbook 'Teaching Dad To Cook Flapjack'.As i had never made this dish before i didn't know what it looked like.This was made more frustrating by the fact that there was no picture in the cookbook.I never understand why some cookbooks do not have a picture of the finished dish by the recipe.Fortunately i found another recipe in another book and was able to see what the clafoutis should turn out like.
Ingredients
2 tbsp plain flour.
4 tbsp caster sugar.
The seeds from 1 vanilla pod.
3 eggs.
125g sour cream.
500g blackberries.
1-2 tbsp icing sugar.
Recipe
1.Pre-heat the oven to 180 degrees c/gas mark 4.
2.Add the plain flour into a mixing bowl.
3.Add the caster sugar to the mixing bowl.
4.Add the seeds from the vanilla pod to the mixing bowl.
5.Add 3 eggs to the mixing bowl.
6.Add the sour cream to the mixing bowl.
7.Whisk all the above ingredients together until you have a smooth batter.
8.Butter an ovenproof dish.
9.Scatter the blackberries in to the ovenproof dish so that they fit snugly.
10.Pour the batter mix over the blackberries.
11.Bake,uncovered for 30- 35 minutes.
12.Take the dish out of the oven when cooked and sprinkle with icing sugar.
For a first attempt it wasn't bad but there didn't seem to be enough batter mix.It was more like a dish of warm fruit with a light smattering of batter mixed in.If i make it again i will up the batter mix ingredients so that the fruit is covered more.
