The Great British Bake Off Challenge 9-Welsh Bara Brith

For my latest Great British Bake Off Challenge i decide to have a go at making a Bara Brith tea loaf.Originally i was going to use a different recipe as i had some mixed peel to use up and the recipe i had in mind used it.I was then looking through the Great British Bake off  book and found another recipe which i chose to try instead even though this one didn't use mixed peel.

 
Ingredients

250g mixed dried fruit.
100g dark brown muscovado sugar.
225ml strong hot tea(Black).
A good pinch of salt.
1/4 tsp ground cinnamon.
1/4 tsp nutmeg.
1 egg.
250g self raising flour.


Recipe

1.Boil a kettle of water and pour onto a teabag,making it up to 225ml.
2.Put the dried fruit into a large heatproof bowl.
3.Add the sugar to the bowl.
4.Pour the hot tea over the dried fruit and sugar.
5.Stir the above ingredients well.
6.Cover the bowl with a dry,clean tea towel and leave to soak for at least 6 hours,preferably overnight.
7.When you are ready to bake pre-heat your oven to 160 degrees c/325 degrees f/gas mark 3.
8.Grease a loaf tin with butter and line it with greaseproof paper covering the base and sides.
9.Add the salt to the bowl of soaked fruit and tea.
10.Add the cinnamon to the bowl of soaked fruit and tea.
11.Add the nutmeg to the bowl of soaked fruit and tea.
12.Beat your egg and add to the bowl of soaked fruit and tea.
13. Stir the above ingredients until they are well mixed.
14.Add the flour ti the bowl and mix in well.
15.Spoon the mixture into the prepared loaf tin and spread evenly.
16.Bake in the pre-heated oven for about 1 hour.It will be ready when a skewer inserted into the middle comes out clean.
17.Stand the tin on a wire rack and leave for about 15 minutes to firm up before turning your loaf out.
18.Leave to cool completely before slicing.

My Tea loaf turned out really well although it took nearly 2 hours before it was properly cooked in my oven.
