Wild Rice Oat and Polenta Loaf
Ingredients
50g Wild Rice.
300ml water.
2 tbsp sunflower oil.
325g white bread flour.
50g wholemeal flour.
50g polenta.
50g rolled oats.
2 tbsp skimmed milk powder.
2 tbsp golden syrup.
2 tsp salt.
1 tsp easy bake dried yeast.
Instructions
1.Cook the wild rice according to the instructions on the packet.
2.Pour the water and sunflower oil into your bread machine pan.(Yes.The first part is done in a bread machine).
3.Sprinkle over the white bread flour and the wholemeal flour.
4.Add the polenta.
5.Add the rolled oats.
6.Add the skimmed milk powder.
7.Ensure that the ingredients cover the water.
8.Add the golden syrup in one corner.
9.Add the salt in another corner.
10.Make a shallow indent in centre of the mixture and add the yeast.
11.Set your bread machine to the dough setting and press start.
12.Add the wild rice when the machine beeps or during the last 5 minutes of kneading.
13.When the dough cycle has finished ,remove from the machine and place on a lightly floured surface.
14.Knock the dough back gently.
15.Divide into 6 equal pieces.
16.Shape each piece into an oblong mini loaf.
17.Place width ways,side by side in a lightly oiled baking tin.
18.Cover with clingfilm and leave to rise in a warm place for 30 to 45 minutes or until the dough almost reaches the top of the tin.
19.Bake for 30 to 35 minutes or until it is golden brown and sounds hollow.
This is what it turned out like.It didn't want to mix properly so Mrs Monday Baker just put it into the bread pan and after rising ok baked it off.

Mrs Monday Baker also made some lovely mince pies partly inspired by The Hairy Bikers.They made their own mincemeat but Mrs Monday Baker used Duerrs Mincemeat which contained port.
Mince Pie Recipe
Ingredients
1.1 jar of mincemeat.
Ingredients for the pastry-
1.450g plain flour.
2.1 tsp baking powder.
3.240g unsalted butter.
4.1 tbsp caster sugar.
5.2 oranges.(Zest only).
6.140 ml of orange juice.(If you get 2 large oranges,when you squeeze them you should get enough juice,thereby eliminating the need for any orange juice).
7.1 egg(Beaten).
Instructions
1.Blend the flour,baking powder,butter and sugar until it resembles breadcrumbs.
2.Add the orange zest and mix until well combined.
3.Mix the orange juice gradually until it comes together as a dough.
4.Turn the dough out onto a lightly floured surface and knead lightly until smooth.
5.Wrap in clingfilm and chill in the fridge for an hour.
6.Cut the pastry in half.
7.Roll one half out to a thickness of 1/2cm-1/4in thickness.
8.Cut out 15 to 18 discs and place in your well oiled muffin tin.
9.Spoon a tablespoon of mincemeat into each pie case.
10.Brush the rim with a little beaten egg.
11.Repeat step 7.
12.Repeat step 8 only this time make the discs slightly smaller.
13.Place a disc on each pastry case and seal the edges.
14.Brush the remaining beaten egg over the tops of the mince pies.
15.Bake for 20-25 minutes or until pale golden brown.

When they are cooked you will notice that they are orange in colour.This is the effect of the orange
juice and orange zest.
