Tom Herberts Wheaten Bread

I have been watching the Fabulous Baker Brothers new series. In this series they are going around the country visiting various food establishments that need some new inspiration. This week they visited Bourton-on The Water. One of the recipes involved a wheaten bread and i decide i would have a go at making it.

 Ingredients

450g wholemeal flour.
1 tsp sea salt.
2 tsps caster sugar.
1 tsp bicarbonate of soda.
50g oats, plus extra to line loaf tin.
20g butter plus extra for lining the tin.
200ml milk.
200ml buttermilk.
100ml black treacle.

Recipe

1.Pre-heat the oven to 170 degrees c.
2.Grease the loaf tin.
3.Sprinkle the greased loaf tin with a few oats.
4.Mix the flour, salt, sugar, bicarbonate of soda and oats in a bowl.
5.Gently heat the butter and treacle in a pan until melted.
6.Add the melted butter and treacle  to the dry ingredients.
7.Add the milk and buttermilk.
8.Mix well until you reach a soft wet dough.(It may seem a bit too wet but don't worry it should be just right).
9.Place the dough in the loaf tin and using your knuckles dent the dough in the middle. This should help the loaf rise evenly.
10.Cover with foil.
11.Bake for 35-40 minutes.(It should be semi crisp on the top and sound hollow when you tap it).
12.Remove from the tin and leave to cool on a wire rack.
