Ingredients
125g butter,softened.
75g caster sugar.
1 egg,separated.
200g plain flour.
A good pinch of salt.
A good pinch of baking powder.
1/2 tsp ground mixed spice.
1/2 tsp ground Cinnamon.
50g raisins.
1tsp finely chopped mixed peel.
I hate it when recipes call for a pinch of something.If you are a novice at baking or cooking how are you expected to know what a pinch is.
Recipe
1.Pre-heat the oven to 200 degrees c/400 degrees f/gas mark 6.
2.Grease 2 baking trays.
3.Beat the butter in a large bowl until creamy.
4.Gradually beat in the sugar.
5.Continue beating for a couple of minutes,until the mixture is light and fluffy.
6.Add the egg yolk(Saving the egg white for the topping),beating for a further minute
7.Sift the flour into the bowl.
8.Sift the salt into the bowl.
9.Sift the baking powder into the bowl.
10.Sift the mixed spice into the bowl.
11.Sift the cinnamon into the bowl.
12.Stir ingredients until thoroughly combined.
13.Work in the raisins.
14.Work in the mixed peel.
15.Use your hands to make a firm dough.
16.Turn the dough out onto a lightly floured surface and roll to about 5mm thick.
17.Cut into rounds using a medium sized(About 6.5cm)fluted biscuit cutter.
18.Re-roll the trimmings and cut out more rounds.
19.Arrange the biscuits apart om the baking trays.
20.Bake for about 10 minutes,until firm and pale golden.
21.Remove from the oven and brush each biscuit with the egg white.
22,Sprinkle with little caster sugar.
23.Return to the oven and cook for another 3-5 minutes until the tops are golden and crunchy.
24.Remove from the oven and leave to cool on the trays for a minute.
25.Carefully transfer to a wire rack and leave to cool completely.
When you arrange them on the trays remember to leave plenty of room between them.I thought i had but they still managed to stick together.
Due to my oven they baked a bit too much on the base.Unfortunately if i had taken them out to stop the base baking too hard the tops would have been under cooked.
