225g self-raising flour.
1tsp salt.
2 tsp baking powder.
1 tsp paprika.
85g butter,diced.
125 g mature cheddar.
75g pancetta pieces.
2 eggs,beaten.
150ml milk.
Recipe
1.Pre-heat the oven to 180 degrees c/350 degrees f/gas mark 4.
2.Grease a 1 pound loaf tin with a little butter and line the base with baking paper.
3.Sift the flour,salt,baking powder and paprika into a large bowl.
4.Add the butter and rub it in with your fingertips until the mixture resembles fine breadcrumbs.
5.Stir in the cheese.
6.Stir in the pancetta.
7.Add the beaten eggs to the dry ingredients.
8.Add the milk to the dry ingredients.
9.Mix the ingredients together.
10.Spoon the mixture into the loaf tin.
11.Bake in the oven for about 1 hour or until the loaf is well risen and golden brown.
12.Leave the bread to cool in the tin,before turning out onto a wire rack to cool completely.
As i said at the beginning it should have been ham but you can use pancetta as i did or bacon.
Be warned though,it will smell so nice that you will want to cut into it straight away and will probably not last long.
