Making Homemade Granola

Whilst flicking through Jo Wheatleys 'A Passion For Baking'  Mrs Monday Baker said,"Whats that?".
It was a picture of her homemade granola.Inspection of the list of ingredients showed that we had most of what was in it so we decided to have a go at making it on Sunday.
This list of ingredients is fairly subjective. You can put in what you like as long as you start with the oats and use one of the liquid ingredients to help coat the oats.

Ingredients

300g oats.
4 heaped tbsp apple sauce.
4 heaped tbsp runny honey.
1 tbsp golden syrup.
3 tbsp sunflower oil.
60g soft dark brown sugar.
60g mixed nuts,roughly chopped.
100g dried fruits,chopped.

I used demerara sugar instead of brown sugar.
For the nuts i used hazelnuts and walnuts.
For the dried fruits i used raisins, cranberries, sultanas, apricots in roughly equal amounts.I added more than it said as we like plenty of fruit in our granola.

Recipe

1.Pre-heat the oven to 170 degrees c/325 degrees f/gas mark 6.
2.Mix all the ingredients except the dried fruit together in a large bowl.Make sure that the oats are well coated in the honey, syrup and oil.
3.Turn the mixture out onto a large baking tray in a single layer.
4.Shake the tray before placing in the oven.
5.Bake for 35-40 minutes until golden.Keep stirring and shaking the granola around whilst it bakes to ensure it browns evenly.
6.Once baked remove from the oven.
7.Add the chopped dried fruits and stir to combine.
8.Leave to cool completely.
9.Store in a airtight container.
