The Great British Bake Off Challenge 6-Jewish Honey Cake.

For this weeks challenge i decided to make 'lekach' or Jewish Honey Loaf.I had some honey left over from my sweet pizzas so in order not to waste any ingredients this seemed a perfect idea.I made it last Saturday but have not tried it yet as it is recommended to leave it to mature as the flavours develop the more it is matured.

 

Ingredients

275g plain flour.
1 tsp ground Cinnamon.
1 tsp ground ginger.
1 tsp ground mixed spice.
1 tsp baking powder.
1/2 tsp bicarbonate of soda.
2 eggs,at room temperature.
150g dark muscovado sugar.
250g runny honey.
125ml vegetable or sunflower oil.
125ml hot coffee(Made with 2 tablespoons of instant coffee dissolved in boiling water).
100g walnut pieces,chopped.


Recipe

1.Pre-heat the oven to 180 degrees c/350 degrees f/gas mark 4.
2.Grease a large loaf tin with butter and line with greaseproof paper.
3.Remove a tablespoon of the flour and set aside.
4.Sift the flour into a bowl.
5.Sift the Cinnamon into the bowl.
6.Sift the ginger into the bowl.
7.Sift the mixed spice into the bowl.
8.Sift the baking powder into the bowl.
9.Sift the bicarbonate of soda into the bowl.
10.In another bowl large enough to hold all the ingredients whisk the eggs with the sugar until well blended.
11.Whisk in the honey.
12.Whisk in the oil.
13.Whisk in the coffee.
14.Gradually whisk in the flour to make a thick smooth batter.
15.Toss the chopped walnuts in the flour you put aside then stir into the cake mixture.
16.Pour the cake mixture into the loaf tin.
17.Bake for about an hour or until a skewer comes out clean when inserted in the cake.
18.Leave to cool in the tin for about 15 minutes.
19.Remove from the tin and leave to cool completely on a wire rack.


Mine actually took a lot longer than an hour to cook as the skewer was still not coming out clean after the hour mark.Unfortunately by the time it did the edges of the cake had burnt slightly.One of the pleasures of my oven.

  1. I made this cake yesterday, so am now waiting 3 days to taste it... How did yours turn out? I had the same issue with cooking time; I have a fan oven so it's usually quicker than recipe times but I had to leave it in longer too.
