Sunflower Bread

I picked up a cookbook for 50p at a car-boot called 'Teaching Dad how to cook flapjack'.The author Miranda Gardiner wrote the book initially for her dad after her mum passed away.Her dad was in his sixties and like many men of his generation he was capable of lots of technical things but had never had to cook.The recipes are collected from family and Friends and are from various places around the world,from Cornwall to Helsinki.
The Sunflower bread looked very nice and also easy to do so i decided to give it a go.




Ingredients

450g wholemeal flower.
1 teaspoon salt.
7g dried yeast(2 teaspoons).
3 tablespoons runny honey.
300-400ml water.
100g sunflower seeds.


Recipe

1.Put the wholemeal flower in a large mixing bowl.
2.Add the salt.
3.Add the sunflower seeds(Keep a handful over for sprinkling on top).
4.Add the dried yeast.
5.Pour the water into a jug.
6.Add the honey to the water.
7.Add the water and honey mixture to the dried ingredients.
8.Mix to form a dough.
9.Knead the dough for about 10 minutes.
10.Divide the dough in two and put each half into a half pound loaf tin.
11.Sprinkle the remaining sunflower seeds over the top.
12.Leave to prove in a warm place until it has risen sufficiently(It will not double like white loafs but should stand above the edge of the tin)
13.Pre-heat the oven to 200 degrees c/gas mark 6.
14,Bake in the oven for 35-40 minutes.it should sound hollow when tapped.



I halved the ingredients as i only wanted to make one loaf.It turned out okay but it was a bit small.According to Mrs Monday Baker if i had reduced the quantity of wholemeal flour and added some white flour this would have helped it to rise a bit more.As i really enjoyed the taste of this loaf i will try that out the next time i make it.
