The Great British Bake-Off Challenge 8

For my latest challenge i decided to make some biscuits.I chose Cornish Fairings.These are traditional West Country Biscuits that were sold at country fairs as edible souvenirs.
They were fairly easy to make but mine did not come out as large as the ones in the Bake-Off book.The recipe says that the dough mixture should be rolled into 18 marble-sized balls.This is what i did but they ended up fairly small rather than the cookie sized biscuits pictured in the book.Obviously the author of the recipe had bigger marbles than me in their childhood.

 
Ingredients

100g plain flour.
1 tsp baking powder.
1/2 tsp bicarbonate of soda.
1/2 tsp ground mixed spice.
40g caster sugar.
50g unsalted butter(Chilled).
1 tbsp mixed peel.
3 tbsp golden syrup.

 
Recipe

1.Grease 3 baking trays with butter.
2.Pre-heat the oven to 190 degrees c/375 degrees f/gas 5.
3.Sift the flour into a mixing bowl.
4.Sift the bicarbonate of soda into the mixing bowl.
5.Sift the mixed spice into the mixing bowl.
6.Sift the sugar into the mixing bowl.
7.Dice the butter and add to the mixing bowl.
8.Rub the butter into the flour mixture until it looks like crumbs.
9.Chop the peel and add to the mixture,mixing it well.
10.Add the syrup and mix well,till it makes a stiff dough.
11.Roll the mixture into about 18 marble-sized dough balls.
12.Place them on the baking trays,remembering to space them well apart to allow for spreading.
13.Bake for 7-8 minutes until they are a rich golden brown.You may want to turn the trays around about halfway through cooking to so that the biscuits cook evenly.
14.When they are cooked leave to cool for a minute until they are firm.
15.Place onto a wire rack and leave to cool completely.


Although my Cornish fairings did not turn out in the size pictured in the bake-off book they still tasted nice.In fact they probably made for a better,little treat.
