Chocolate Bread And Butter Pudding

I made this pudding to go with the Sausage and Apple Tray-bake(Please see previous post for recipe).
I had never made a Bread and butter pudding before so this was a journey into the unknown,especially cooking it bain-marie style.


Ingredients

225g brioche.
15g butter.
50g chocolate chips.
1 egg.
2 egg yolks.
50g caster sugar.
410g light evaporated milk.

Recipe

1.Pre-heat the oven to 180 degrees c/350 degrees f/gas mark 4.
2.Cut the brioche into thin slices.
3.Lightly butter one side of each slice.
4.Place a layer of brioche buttered side down in the bottom of an oven proof dish.
5.Sprinkle a few chocolate chips over the top.
6.Continue to layer the brioche and chocolate chips,finishing with a layer of bread on top.
7.Whisk together the egg,egg yolks and sugar until they are well combined.
8.Heat the milk in a small saucepan until it just begins to simmer.
9.Gradually add the milk to the egg mixture,whisking as you do.
10.Pour the custard over the pudding and leave to stand for at least 5 minutes.
11.After leaving the the pudding to stand for at least 5 minutes press the brioche down into the milk.
12.Place the pudding in a roasting tin and fill the tin with boiling water halfway up the side of the dish(This is what is known as bain-marie).
13.Bake for 30 minutes or until the custard has set.
14.Leave to cool for 5 minutes before serving,

You can leave the custard to soak into the bread for a good couple of hours if you have the time as this will allow it to soak in thoroughly.
Mine took a bit longer than 30 minutes for the custard to set but then i always need to cook things longer in my oven.
I am amazed it came out so well as i actually only [put 1 egg in and 2 lots of whites instead of 1 egg and 2 yolks.I must have had a senior moment.
