Sausage And Apple Traybake.

I decide to make a surprise meal for Mrs Monday Baker.I chose to make Sausage and Apple Tray bake and Chocolate Bread and Butter Pudding(See separate post for this recipe).


 
Ingredients

8 pork sausages.
1/2 tsp olive oil.
750g of new potatoes.
1 garlic bulb.
4 sprigs of rosemary.
206g of cubed pancetti.
2 red skinned apples.

Recipe

1.Preheat a large roasting tin in the oven to 220 degrees c/gas 7.
2.Add the sausages to the tin.
3.Drizzle with the olive oil and roast for 10 minutes.Turn the sausages halfway.
4.Cut the potatoes into quarters,smaller if necessary,depending on the size of the potatoes initially.
5.Put the cut potatoes into a bowl.
6.Separate the garlic cloves,bruise them then add them to the potatoes.
7.Chop the rosemary and add to the potatoes.(Add as much or as little rosemary as you like.Sometimes the rosemary can be overpowering i find).
8.Add the pancetta to the mix.
9.Core the apples and cut them into wedges.
10.Add to the mix.
11.Toss all the ingredients in the bowl together.
12.After about 10 minutes add the potato mixture to  the sausages,in a single layer.
13.Season with a little salt and black pepper.
14.Return to the oven and cook for 20-30 minutes,until everything is golden brown.
15.Serve and enjoy.


Helpful Suggestions

I cut some of my potatoes smaller as i had a bag of mixed sized potatoes and i didn't want large chunks.
I also used smoked bacon lardons instead of pancetti as they are cheaper but still create the same taste,
I only added a little bit of rosemary as i personally find it can overpower your dishes sometimes.
You may need to cook the dish for longer than 20 -30 minutes,depending on your oven.I cooked it for over 45 minutes and the sausages and potatoes still hadn't gone golden brown,


This was a really easy dish to make and tasted fantastic.I will certainly be cooking it again.
