Mrs Monday Baker had been away for a few days so i decided to cook a nice meal for when she came home.I had found another tray bake recipe.This included beetroot which is in season at the moment so was pe3rrfect.According to the recipe it could all be thrown into a roasting tin and left for 45 minutes.How easy.Not as easy as it made out as it happened.
Ingredients
6 sausages.
250g potatoes.
2 shallots.
200g red grapes.
1/4 bulb of garlic.
200g beetroot.
3-5tbsp olive oil.
Salt.
Pepper.
The above ingredients can be increased or decreased depending on how many you are cooking for.
Recipe
1.Peel your potatoes then cut into 4cm pieces and add to your tray..
2.Peel your shallots and add to your tray.
3.Add your garlic,unpeeled.
4.Quarter your beetroot and add to your tray.
5.Add your sausages.
6.Add your grapes.
7.Drizzle your olive oil over the ingredients in your tray.
8.Season with salt and pepper.
9.Roast for 45 minutes.
That is how the book said to cook the dish.After 45 minutes the beetroot were hardly cooked and the potatoes were still hard.At the one hour mark the beetroot and potatoes were cooked a little bit but the sausages were virtually done.I took the sausages out and carried on roasting the potatoes and beetroot.The potatoes were now starting to stick to the pan so after 90 minutes i decided that as they were cooked just enough and the beetroot was cooked enough and weren't still in their virtual raw state i would add the sausages back in for 5 minutes before serving up.
It tasted okay but would have been a whole lot better if the potatoes and beetroot had cooked fully.Next time i would part-boil the potatoes and beetroot before adding them to the tray.
