The Great British Bake Off-Challenge 1.

For my first 'Great British Bake Off Challenge' i decided to make fairy cakes.I had never made fairy cakes before so i definitely saw this as a challenge.Once i had made them though i realised that there was nothing to them.They took a matter of minutes to knock up and only about 15 minutes to cook.Knocking up some butter icing was just as easy as well.The longest part,really,was the icing of the cakes themselves.

 

Ingredients-For the Fairy Cakes.

175g butter(Soft but not runny).
175g caster sugar.
3 eggs(Beaten).
1/2 teaspoon vanilla extract.
175g self-raising flour.
1/2 teaspoon baking powder.
2 tablespoons milk.

Recipe-for fairy cakes.

1.Preheat the oven to 180 degrees c/350 degrees f/gas mark 4.
2.Arrange the paper cases in the tin.
3.Put the soft butter,sugar,beaten eggs into a bowl.
4.Add the vanilla extract.
5.Sift the flour into the bowl.
6.Sift the baking powder into the bowl.
7.Add the milk.
8.Mix thoroughly to make a smooth ,thick cake batter.
9.Spoon the mixture into the paper cases so they are evenly filled.Each one should be about half full.
10.Bake in the preheated oven for 12 to 15 minutes(If small fairy cakes)/15-20 minutes(If larger cakes) until the sponge springs back if you gently press it.
Fairy cakes-uniced. 
11.Remove the cakes from the trays and leave on a wire cooling rack to cool completely before icing.


Ingredients-For butter icing.

125g butter(Soft but not runny).
400g icing sugar.
3-4 tablespoons milk.
1 teaspoon vanilla extract.

Recipe

1.Put the soft butter into a mixing bowl and beat with a wooden spoon until creamy in colour and texture.
2.Sift the icing sugar into the bowl.
3.Add the milk and the vanilla.
4.Beat until very smooth.
5.Spread on top of the cakes.
