This was in fact very easy to make.Mixing all the ingredients together took about five minutes or so.I poured the mixture into the prepared baking tin,put it in the oven and 35 minutes later had a wonderful cornbread.
Ingredients
100g plain flour.
1tbsp baking powder.
Pinch of salt.
100g polenta.
115g Cheddar Cheese,grated.
2 eggs,beaten.
300 ml milk.
50g butter,melted.
Recipe
1.Preheat the oven to 200 degrees c/400 degrees f/gas mark 6.
2.Grease a 2lb loaf tin with butter and line the base with greaseproof paper.
3.Sift the flour into a bowl.
4.Sift the baking powder into the bowl.
5.Sift the salt into the bowl.
6.Stir in the polenta.
7.Stir in the cheese.
8.Make a well in the centre.
9.Add the eggs to the well.
10.Add the milk to the well.
11.Add the butter to the well.
12.Gradually incorporate the dry ingredients into the liquid until smooth.
13.Pour the mixture into the prepared tin.
14.Bake in the oven for 40-45 minutes,or until firm and golden brown.
15.Leave to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
